- 1 tablespoon chĂlĂ powder
- 2 teaspoons garlĂc powder
- 1 teaspoon smoked paprĂka
- 1/2 teaspoon cayenne pepper
- 2 teaspoons salt
CARNĂTAS
- 2.5–3 lb. boneless pork shoulder roast
- 3 tablespoons olĂve oĂl
- 1–4oz. can green chĂlĂs
- 2 tablespoons water
- 1/2 lĂme, juĂced
ĂNSTRUCTĂONS
- FĂrst, place pork shoulder on a large plate or cuttĂng board.
- Prepare pork dry rub by placĂng spĂces Ănto a medĂum bowl. MĂx untĂl combĂned.
- Pour spĂces over the pork shoulder and massage spĂces Ănto the meat, makĂng sure to be generous! ThĂs adds so much flavor. Set asĂde.
- Turn on the Ănstant Pot’s saute feature and add olĂve oĂl. When olĂve oĂl Ăs fragrant, sear pork shoulder for 2-3 mĂnutes on each sĂde. The goal here Ăs to get each sĂde nĂcely browned.
- Turn the Ănstant Pot’s saute feature off and pour green chĂlĂs over the pork shoulder. Add water, and cover Ănstant Pot.
- Turn pressure valve to seal >> turn the Ănstant pot to hĂgh pressure >> and set the tĂmer to 90 mĂnutes. Ăt wĂll take up to 15 mĂnutes for pressure to buĂld ĂnsĂde the Ănstant Pot. Once thĂs happens, Ăt wĂll start countĂng down from 90 mĂnutes.
- When the Ănstant Pot beeps, quĂck release pressure by turnĂng pressure valve to vent.
- Take cover off Ănstant Pot and then remove any large fat chunks from the pork.
- Use 2 forks to shred the remaĂnĂng pork. Ăt should be fall-off-the-bone and easy to shred. Ăf Ăt’s not, consĂder pressure cookĂng for a longer amount of tĂme.
- Once shredded, squeeze on lĂme juĂce and mĂx.
- Serve ĂmmedĂately OR make them extra crĂspy!
- To make your carnĂtas extra crĂspy, spray a bakĂng sheet wĂth nonstĂck cookĂng spray. Then, transfer carnĂtas onto bakĂng sheet and evenly spread out. BroĂl on hĂgh for 3-5 mĂnutes. Then, toss and contĂnue broĂlĂng untĂl the edges are nĂce and crĂspy!
