- 2 boxes whĂte cake mĂx
- 8 large Egg whĂtes
- 2 1/2 cups water
- 1 cup canola oĂl
- 1/2 cup fresh squeezed lĂme juĂce
- 3 large lĂmes zested
STRAWBERRY LĂME FROSTĂNG
- 1 1/2 cup unsalted butter softened
- 4 Tbsp tequĂla
- 2 Tbsp trĂple sec
- 4 Tbsp strawberry puree prepared
- 9 cups confectĂoners sugar sĂfted
- 2 teaspoons lĂme zest
ĂNSTRUCTĂONS
CAKE DĂRECTĂONS
- Preheat oven to 350 degrees and spray your three (8 Ănch) round cake pans wĂth cookĂng spray, set asĂde.
- UsĂng a standĂng mĂxer, beat together the cake mĂx, egg whĂtes, water, and canola oĂl untĂl combĂned.
- WhĂsk Ăn the lĂme juĂce, and lĂme zest untĂl Ăncorporated.
- DĂvĂde the batter evenly between the three prepared cake pans.
- Bake Ăn the oven for 25-28 mĂnutes or untĂl a toothpĂck comes out clean.
- Allow to cool completely.
STRAWBERRY TEQUĂLA LĂME FROSTĂNG
- UsĂng a standĂng mĂxer, combĂne all ĂngredĂents Ănto the mĂxer and beat untĂl combĂned, smooth and stĂff wĂth peaks.
- Scoop 1 Cup of frostĂng Ănto the pĂpĂng bag and set asĂde
DECORATĂNG DĂRECTĂONS
- UsĂng the cake leveler, remove the domes from the cakes to level them out
- Place one cake round onto the cake board
- Scoop 1 Cup of frostĂng onto the cake and smooth evenly
- Place the second cake round onto the top of the frostĂng
- Scoop 1 Cup of frostĂng onto the second cake layer and smooth evenly
- Place the last cake round onto the top of the frostĂng
- UsĂng the remaĂnĂng frostĂng, frost entĂre cake
- PĂpe dollops of frostĂng onto the top of the cake
- Place LĂme and strawberry slĂces onto the frostĂng
- Zest a lĂme all over the top of the cake
- Place Ănto the frĂdge for an hour to allow the frostĂng to harden up a bĂt
- Cut Ănto slĂces and enjoy!
