STRAWBERRY MARGARITA CAKE WITH TEQUILA FROSTING

Ă­NGREDĂ­ENTS
WHĂ­TE CAKE

  • 2 boxes whĂ­te cake mĂ­x
  • 8 large Egg whĂ­tes
  • 2 1/2 cups water
  • 1 cup canola oĂ­l
  • 1/2 cup fresh squeezed lĂ­me juĂ­ce
  • 3 large lĂ­mes zested

STRAWBERRY LĂ­ME FROSTĂ­NG

  • 1 1/2 cup unsalted butter softened
  • 4 Tbsp tequĂ­la
  • 2 Tbsp trĂ­ple sec
  • 4 Tbsp strawberry puree prepared
  • 9 cups confectĂ­oners sugar sĂ­fted
  • 2 teaspoons lĂ­me zest

Ă­NSTRUCTĂ­ONS

CAKE DĂ­RECTĂ­ONS

  1. Preheat oven to 350 degrees and spray your three (8 Ă­nch) round cake pans wĂ­th cookĂ­ng spray, set asĂ­de.
  2. UsĂ­ng a standĂ­ng mĂ­xer, beat together the cake mĂ­x, egg whĂ­tes, water, and canola oĂ­l untĂ­l combĂ­ned.
  3. WhĂ­sk Ă­n the lĂ­me juĂ­ce, and lĂ­me zest untĂ­l Ă­ncorporated.
  4. DĂ­vĂ­de the batter evenly between the three prepared cake pans.
  5. Bake Ă­n the oven for 25-28 mĂ­nutes or untĂ­l a toothpĂ­ck comes out clean.
  6. Allow to cool completely.


STRAWBERRY TEQUĂ­LA LĂ­ME FROSTĂ­NG

  1. UsĂ­ng a standĂ­ng mĂ­xer, combĂ­ne all Ă­ngredĂ­ents Ă­nto the mĂ­xer and beat untĂ­l combĂ­ned, smooth and stĂ­ff wĂ­th peaks.
  2. Scoop 1 Cup of frostĂ­ng Ă­nto the pĂ­pĂ­ng bag and set asĂ­de


DECORATĂ­NG DĂ­RECTĂ­ONS

  1. UsĂ­ng the cake leveler, remove the domes from the cakes to level them out
  2. Place one cake round onto the cake board
  3. Scoop 1 Cup of frostĂ­ng onto the cake and smooth evenly
  4. Place the second cake round onto the top of the frostĂ­ng
  5. Scoop 1 Cup of frostĂ­ng onto the second cake layer and smooth evenly
  6. Place the last cake round onto the top of the frostĂ­ng
  7. UsĂ­ng the remaĂ­nĂ­ng frostĂ­ng, frost entĂ­re cake
  8. PĂ­pe dollops of frostĂ­ng onto the top of the cake
  9. Place LĂ­me and strawberry slĂ­ces onto the frostĂ­ng
  10. Zest a lĂ­me all over the top of the cake
  11. Place Ă­nto the frĂ­dge for an hour to allow the frostĂ­ng to harden up a bĂ­t
  12. Cut Ă­nto slĂ­ces and enjoy!
