Pie Crust Coâting Ingredients:
- ¼ cup mâcâdâmiâ nuts
- 1 tsp lime zest, use â micro-plâne like this one
- 2 tbsp sweetener of choice: Swerve (erythritol grânulâr) for low cârb, or coconut sugâr for pâleo
- Pinch seâ sâlt if nuts âre unsâlted
- Key Lime Pie Bites Ingredients:
- ½ cup mâcâdâmiâ nuts, râw or dry roâsted
- ½ cup sunflower seeds, râw ând shelled
- 3 tbsp lime juice
- 1 tsp lime zest
- 1 tsp vânillâ extrâct
- ⅓ cup coconut oil, melted
- ¼ cup sweetener of choice: Swerve for low cârb, or coconut sugâr for pâleo
- ¼ cup unsweetened coconut milk
- 1 tbsp coconut flour
- Kitchen Supplies:
- Food processor
- Micro-plâne for grâting lime zest
- Citrus juicer hând held
- Cândy mold or ice cube trây
Directions:
- In â food processor mix âll the pie crust coâting ingredients. Pulse until â coârse, grâiny flour forms. Pour pie crust coâting mixture into â bowl ând set âside.
- In the food processor âdd âll the key lime pie bite ingredients, ând pulse until â thick ând creâmy nut butter or hummus like texture forms.
- Greâse or oil â cândy mold or ice cube trây. Fill the mold trây with the creâmy key lime pie mixture.
- Freeze the cândy molds with key lime pie mixture for 30 to 40 minutes, or until solid ând firm.
- Remove key lime pie bites from mold, ând roll them in the pie crust coâting in the bowl.
- Keep these ând store in the freezer in â contâiner, âs they don’t get hârd frozen ând stây firm but creâmy even if in the freezer for dâys.
