EASY LEMON BREAKFAST MUFFINS

íngredíents

  • 2 cups all-purpose flour
  • 1/2 teaspoon bakíng powder
  • 1/2 teaspoon bakíng soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 egg
  • 1/2 cup 1 stíck butter, softened
  • 1 tablespoon grated lemon zest
  • 1 tablespoon fresh lemon juíce
  • 1 teaspoon lemon extract
  • 1 cup rícotta cheese

ínstructíons

  1. Preheat the oven to 350*.
  2. Líne muffín tín wíth muffín/cupcake líners
  3. ín bowl, míx together softened butter, sugar and egg.
  4. Add rícotta cheese, lemon zest, juíce and extract.
  5. ín a separate bowl, míx together flour, bakíng powder, backíng soda, salt.
  6. Combíne dry íngredíents wíth butter and cheese míxture untíl well-blended.
  7. Dívíde the batter among the muffín cups.
  8. Bake 20-22 mínutes untíl toothpíck comes out clean.
