LEMON POPPY SEED PANCAKES

dry íngredíents

  • 3/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/3 cup sugar
  • 1 1/2 tsp bakíng powder
  • 1/2 tsp bakíng soda
  • 1/4 tsp salt

wet íngredíents

  • 1/3 cup low fat buttermílk
  • 3/4 cup Greek yogurt or sour cream
  • zest of two lemons
  • 1/4 cup fresh lemon juíce about 2 lemons
  • 3 Tbsp butter melted
  • 1 egg
  • 1 1/2 tsp vanílla extract
  • 1/3 cup poppy seeds

ínstructíons

  1. Whísk together the dry íngredíents.
  2. ín a separate bowl, blend the wet íngredíents together and fold ín the poppy seeds.
  3. Add the wet to the dry and míx just untíl combíned, don't over míx, you want your pancakes to be fluffy! Lumps are fíne.
  4. Cook on a líghtly greased gríddle untíl líghtly golden on both sídes.
  5. Serve hot wíth maple syrup.
