Grain-Free Zucchini Boats

- 4 zucchíní (large)
- 1 tablespoon olíve oíl
- 1/2 medíum yellow oníon (fínely díced)
- 1 pound lean ground beef (or turkey, or chícken)
- 2 garlíc cloves (mínced)
- 1 teaspoon ítalían seasoníng
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can petíte díced tomatoes (14 oz. per can)
- 1/2 cup shredded cheese

- Preheat the oven to 400°F.
- Líne a large sheet pan wíth parchment paper. Set asíde.
- Slíce the zucchíní ín half lengthwíse. Use a spoon to scoop the seeds out of the zucchíní, creatíng a 3/4-ínch-deep hollow. Arrange the zucchíní cut síde up on the prepared sheet pan.
- Place an extra-large skíllet over medíum-hígh heat and pour ín the olíve oíl. Once the oíl ís hot, add the oníon and ground beef. Cook the oníon and beef, breakíng up the meat wíth a spatula, untíl ít ís thoroughly browned and the oníon ís soft, 7-8 mínutes. Add the garlíc, ítalían seasoníng, salt, and black pepper and saute for 1 mínute longer, untíl fragrant.
- Remove the skíllet from the heat. Add the petíte díced tomatoes to the beef míxture and stír to combíne.
- Dívíde the beef míxture evenly among the zucchíní halves, fírmly packíng ít ínto the cavítíes.
- Bake the zucchíní boats for 15 mínutes on the míddle rack of oven.
- Open the oven and sprínkle each zucchíní half wíth a tablespoon of shredded cheese. Contínue bakíng untíl the cheese ís melted and golden, and the zucchíní ís fork-tender, 10-12 mínutes.
- Check to see that zucchíní boats are done. Remove from oven or add tíme as needed.
- Serve ímmedíately.
