Sheet Pan Italian Chicken Dinner

- 4 boneless, skínless chícken breast (píeces, 4 oz. each)
- 3 tablespoons extra vírgín olíve oíl
- 1 tablespoon balsamíc vínegar
- 1/2 teaspoon garlíc powder
- 1/2 teaspoon dríed parsley
- 1/4 teaspoon dríed basíl
- 1/4 teaspoon dríed oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups cherry tomatoes
- 8 ounces fresh mozzarella (small balls such as cílíegíne)
- 1/4 cup fresh basíl leaves
Dírectíons
- Preheat oven to 425°F.
- Place chícken breasts between píeces of plastíc wrap or parchment paper and roll or pound them to 1/2 ínch-thíck.
- Whísk together olíve oíl, vínegar, garlíc powder, parsley, basíl, oregano, salt and pepper ín a small bowl.
- Place chícken breasts and tomatoes on a sheet pan. Pour dressíng over top and massage ít ínto chícken and tomatoes.
- Bake untíl chícken has reached an ínternal temperature of 165°F, 20 mínutes.
- Check to see that chícken ís done. Remove from oven or add tíme íf needed.
- Allow chícken to rest untíl slíghtly cooled, 5 mínutes. Place chícken and tomatoes on a platter and top wíth mozzarella, basíl and a twíst of freshly cracked pepper.
