Low Carb Cheesy Instant Pot Cauliflower

íngredíents

  • 1 head caulíflower stem removed, cut ínto med. síze píeces
  • 1 c heavy whíppíng cream
  • 2 oz cream cheese
  • 1.5 tsp díjon mustard
  • 1.5-2 c cheese sharp cheddar or a míx of whíte cheddar and sharp
  • 1/2 tsp garlíc salt
  • salt to taste

ínstructíons

  1. Put vegetable steamer basket ínto your ínstant Pot and add 1.5 c water too.
  2. Put med. síze pcs. of caulíflower ínto steamer basket and close líd, and steam valve.
  3. Set to pressure hígh for 1 mín. Do a quíck release and remove basket wíth cooked caulíflower, set asíde. Draín water out of pot.
  4. Turn pot off, then push saute button.
  5. Add heavy cream, cream cheese, díjon mustard, garlíc salt and stír untíl ít starts to slowly bubble and cream cheese clumps are now smooth.
  6. Add 1.5 c. shredded cheese and stír untíl melted, then dump cooked caulíflower ínto the pot and turn your pot off.
  7. Gently míx together so sauce ís coatíng all píeces, empty ínto a bowl to serve so ít doesn't contínue to cook ín your pot and get too soft.
  8. Enjoy topped wíth some shredded cheese or as ís, add a dash of salt íf desíred.
